Teach Food - Fried Green Tomatoes with Blue Cheese

FRIED GREEN TOMATOES WITH BLUE CHEESE
Serves 4
 
8 Slices green tomatoes or firm red tomatoes
½ cup Buttermilk
1 egg beaten
½ T Tabasco
½ cup All Purpose Flour
1 cup Yellow cornmeal
½ t salt
1/8 t pepper
¼ cup blue cheese
Peanut oil as needed for frying
 
Procedure:
 

Core the top of each tomato and cut into ¼ inch thick slices. Combine buttermilk, egg and Tabasco. Place the tomato slices in the mixture and marinate for 30 minutes. Combine flour, cornmeal, salt, and pepper. Drain the tomato slices and dredge in the breading mixture. Place the slices on a baking sheet and refrigerate for 30 minutes. Heat the oil to 350. Pan-fry for 45 seconds to 1 minute on each side or until golden brown. Drain on paper towels and serve 2 slices on a warm plate. Spoon roasted red pepper sauce and sprinkle with blue cheese.
