
Crème Brulee Dome
Ingredients:
- 6 oz Heavy Cream
- ½ vanilla bean
- 2 egg yolks
- 3/4 oz sugar
Method:
Open Vanilla pod and scrape out seeds.
Scald cream and vanilla together.
Whisk together yolks and sugar.
Temper cream mixture together with egg yolks.
Skim off any foam and pour into molds.
Bake at 300 degrees
Chill and then un mold
