Teach Food - Chow-Chow

CHOW-CHOW
 
INGREDIENTS

  • 2 green tomatoes, small dice
  • 3 green bell peppers, small dice
  • 3 red bell peppers, small dice
  • 1 yellow onions, small dice
  • 1 small head cabbage, shredded thin
  • 1 carrots, small dice
  • 2 medium head garlic, minced
  • 2 cups sugar
  • 2 cups cider vinegar
  • 2 T Kosher salt
  • 1 tablespoon pickling spice

Rinse the vegetables, peel onions, carrots and garlic. Remove the seeds from the peppers and scrape the inside to remove the ribs. Place all the vegetables in a non-reactive container. Add salt, cover with water and let stand for 30 minutes.
Prepare vegetables, and place in a large pot.  Add the sugar, vinegar and pickling spice. Bring to a boil and then reduce heat and simmer, 20 minutes.  Refrigerate for 1 hour; strain off excess liquid.
