Broccoli and Bacon Salad

Serves 4 to 6
 
Ingredients:
 
1 large bunch broccoli
½ cup raisins, soaked in orange juice for ½ hour
1 small red onion, minced
1 cup mayonnaise
2 T white vinegar
2 T sugar
12 slices bacon, cooked crisp and crumbled
salt and pepper to taste
 

Cut the broccoli into florets and blanch for 2 minutes. Drain the raisins well, and combine the raisins and onions with the broccoli. Whisk together the mayonnaise, vinegar, and sugar and toss with the broccoli, raisins, onions, and bacon.
