
7 Layer Salad
Yield 4-6 servings
Fresh spinach
Romaine lettuce, cleaned and torn into bite sized pieces
1 purple onion, sliced into rings
4-5 eggs, hard boiled, sliced
1 cup frozen peas
1 ½ cups shredded cheddar cheese
½ cup mayonnaise
½ cup sour cream
6-8 slices bacon
Fry bacon and drain on paper towels. When cool, crumble. Set aside for garnish. Hard boil eggs. Place peas in strainer and briefly rinse in cold water to remove any ice particles. In a large clear glass trifle bowel (or arrange as a composed salad) layer the spinach, lettuce, sliced onions, sliced eggs, peas and cheese. Mix mayonnaise and sour cream and spread on top. Sprinkle with crumbled bacon.
